Are the beer and wine pairings small tastes that the chefs select to go with their plates or are they part of the two drinks included in the ticket price?

The "pairings" are not paired in the traditional sense. The beer and wine tents will be specifically serving all of the beverage offerings.  Each ticket holder will receive 3 tickets (the volume measurement to the equivalent of 2 drinks of beer or wine) and can go to the designated drink tent. Each ticket holder will be able to choose between beer and wine options on their own.
